I liked going through the recipes and you showing us how to do them. I have wanted to use kale and quinoa but didn't know the tips to using them. Now I know. I am also adding more spices than the typical salt and pepper.

I am very picky and not one to try different things ... Changes I have made from taking (the class) are I now make the delicious kale/apple salad quite often. I keep my food in the refrigerator so I can SEE what I have and go for the veggies first and meat second. I have stocked my pantry with spices and products from the class. I may not have used everything yet but I learned I can experiment.

She teaches knife skills, kitchen zones, and strategic places to put food in your refrigerator. I'm also switching to a more plant focused eating. It's all about taking baby steps and incorporating little twists into your lifestyle, your daily living. This was a very fun way to learn more about our health.

My husband is pleased that he now has the tools to make better choices to decrease his sodium intake and we are trying to incorporate some of these recipes into our weekly meal plans.
